Avial Recipe (Kerala-style Vegetable Curry with Coconut)

Avial is a traditional South Indian dish, popular in Kerala and Tamil Nadu. It is a delicious dish cooked with coconut, yogurt, and mild spices and mixed with many healthy vegetables. The dish has a light and creamy texture and is an essential part of a traditional meal. It is very easy to make. Let's see how it is made:


Ingredients:

Vegetables (Cut into 2-inch sticks):

  • 1 cup raw banana (plantain)

  • 1 cup ash gourd (white pumpkin)

  • 1/2 cup drumsticks (cut into 2-inch pieces)

  • 1/2 cup carrots

  • 1/2 cup beans

  • 1/2 cup yam (elephant foot)

  • 1/2 cup snake gourd 

For the Coconut Paste:

  • 1 cup grated coconut

  • 2-3 green chilies

  • 1 tsp cumin seeds

  • 2 tbsp yogurt (curd)

  • 1/2 tsp turmeric powder

  • Salt to taste

  • 1 tbsp coconut oil

  • 1 sprig curry leaves


Avial Recipe (Kerala-style Vegetable Curry with Coconut)

Method of making Avial :

  • First, we will cook all the vegetables. For this, add all the vegetables in a pan. Add turmeric and salt to it and add enough water to submerge the vegetables.

  • Cover the pan and cook on medium flame till the vegetables become soft but not mushy.

  • While the vegetables are cooking, we will prepare the coconut paste.

  • For this, make a coarse paste of grated coconut, green chilies and cumin seeds. You can add some water if needed.

  • After the paste is ready, take it out and keep it aside and after the vegetables are cooked, add this paste and mix it gently.

  • Now cook it on low flame for 3-4 minutes, keep stirring in between so that it does not burn.

  • After this, add curd to it and mix it gently. Turn off the gas and add coconut oil on top and fresh curry leaves for fragrance.

  • Serve it hot with rice and Kerala-style sambar or rasam.

  • Avial is also a main dish in Onam Sadya (festive meal).
