Brown Rice Pulao Recipe (Serves 6)

Brown Rice Pulao is a nutritious, tasty dish made with wholesome brown rice and vegetables. It is a quick and healthy meal option that is good for health. Let's see how to make this nutritious dish:


time: 1 hour

Ingredients:

  • 2 cups brown rice

  • 1 large onion, thinly sliced

  • 1 large tomato, chopped

  • 1 cup mixed vegetables (carrot, peas, beans, and bell peppers), chopped

  • 1 tsp cumin seeds

  • 2 bay leaves

  • 4-5 cloves

  • 1-inch cinnamon stick

  • 2-3 cardamom pods

  • 1 tsp ginger-garlic paste

  • 2-3 green chilies, slit 

  • 1/2 tsp turmeric powder

  • 1/2 tsp red chili powder 

  • 2 tsp coriander powder 

  • 1 tsp garam masala

  • 1/2 cup fresh coriander leaves, chopped

  • 1/4 cup fresh mint leaves, chopped (optional)

  • 4 cups water

  • 2 tbsp oil or ghee

  • Salt to taste

  • Lemon wedges for garnish


Brown Rice Pulao Recipe (Serves 6)


Method of making Brown Rice Pulao:

  • Wash the brown rice 2-3 times in cold water.

  • Soak the rice in water for at least 30 minutes. This helps the rice cook faster.

  • Strain the soaked rice and boil it with 4 cups of water and a little salt till it is cooked but not mushy.

  • Once cooked, drain it well and keep the rice aside.

  • Heat oil or ghee in a large pan on medium heat. Add cumin seeds, bay leaves, cloves, cinnamon, cardamom, and sauté for a few seconds till they become aromatic.

  • Now add chopped onion and sauté till it becomes golden brown. Next, add ginger-garlic paste and green chilies and cook for a minute till the raw smell goes away.

  • Once it is sautéed well, add chopped tomatoes and cook them till they become soft.

  • After this, add chopped vegetables (carrots, peas, beans, and capsicum) and mix well.

  • Now add all the dry spices (turmeric powder, red chili powder, coriander powder, garam masala, salt) and mix well.

  • Cook the vegetables for 5-7 minutes till they become soft but still a little crispy.

  • When the vegetables are cooked, add cooked brown rice and mix gently so that the rice does not break.

  • Add coriander leaves and mint leaves on top, cover and cook on low flame for 5-7 minutes to infuse the flavors.

  • Keep stirring in between so that it does not burn. After some time turn off the flame and garnish with fresh coriander leaves.

  • You can eat it hot with raita, plain yogurt or salad. You can also add lemon slices to enhance the taste.
