Chicken Chettinad Recipe| Easy & Quick

Chicken Chettinad is a South Indian dish. It is a spicy and delicious chicken curry from the Chettinad region of Tamil Nadu. Freshly ground spices and coconut are used to make it, which has a rich, aromatic gravy. This chicken dish is known for its spicy taste and can be eaten with rice or dosa, which tastes delicious.



Ingredients:

For the Chettinad Masala:

  • 2 tbsp coriander seeds

  • 1 tsp cumin seeds

  • 1 tsp fennel seeds

  • 1 tsp black peppercorns

  • 4-5 dried red chilies

  • 1-inch cinnamon stick

  • 2 cloves

  • 2 cardamoms

  • 1-star anise

  • 1 tbsp grated coconut

For the Curry:

  • 1 kg chicken (bone-in, cut into pieces)

  • 2 tbsp oil (preferably coconut oil)

  • 1 large onion finely chopped

  • 2 tomatoes puree

  • 1 tbsp ginger-garlic paste

  • 1/2 tsp turmeric powder

  • 1 tsp red chili powder

  • 1 tsp garam masala

  • 10-12 curry leaves

  • 1/2 cup water (adjust as needed)

  • Salt to taste

  • Fresh coriander leaves for garnish

Method of Making Chicken Chettinad

  • First, we will prepare this Chettinad masala. For this dry roast coriander seeds, cumin seeds, fennel seeds, black pepper, red chili, cinnamon, cloves, cardamom, star anise, and grated coconut in a pan.

  • When it starts giving out aroma, take it off the gas, cool it, and grind it finely. Keep it aside.

  • Now to cook the chicken, heat oil in a pan or kadhai, add curry leaves and chopped onion. Fry it till it becomes golden brown.

  • Now add ginger-garlic paste and fry till the raw smell disappears.

  • After this, add tomato puree, turmeric powder, red chili powder and salt and cook it for a few minutes. Cook it till the oil separates from it.

  • Now add chicken pieces mix well on high flame and cook for a few minutes.

  • Add freshly ground Chettinad masala and mix well.

  • Add 1/2 cup water cover and cook for 25-30 minutes till the chicken becomes soft.

  • After this, add garam masala and mix and cook for a few minutes.

  • Once cooked, garnish it with fresh coriander leaves and serve hot with rice, dosa or parotta.
