Easy and Quick Lemon Rice Recipe

Lemon rice is a simple and delicious dish from South India. It is made with cooked rice, lemon juice and tempered spices. It is a light, spicy, and quick dish. It is often made during festivals, for lunchboxes or to eat with curd and pickle. It is very easy to make, let's see how it is made:



Ingredients:

  • 2 cups cooked rice (preferably cooled, made from 1 cup raw rice)

  • 2 tbsp vegetable oil

  • 1 tsp mustard seeds

  • 1 tsp cumin seeds

  • 1/2 tsp turmeric powder

  • 2 dried red chilies (broken)

  • 1-2 slit green chilies 

  • 1 tbsp chana dal

  • 1 tbsp urad dal 

  • 8-10 curry leaves

  • 2 tbsp peanuts

  • 2 tbsp fresh lemon juice

  • Salt to taste

  • fresh chopped coriander leaves for garnish


Easy and Quick Lemon Rice Recipe

Method of making Lemon Rice:

  • To prepare the rice, cook it and let it cool down. Fluff it with a fork to separate the grains.

  • To temper the spices, heat oil in a pan, add mustard seeds, and let them crackle.

  • After this, add cumin seeds, chana dal, urad dal, and peanuts/cashews. Fry it till it turns golden brown.

  • Now add dried red chilies, green chilies, and curry leaves and fry for a few seconds.

  • After this, add turmeric powder and mix well.

  • Now add cooked rice and salt and mix gently so that the spices and rice mix well.

  • Now turn off the flame add fresh lemon juice and mix well.

  • Garnish the dish with freshly chopped coriander leaves and serve hot with papad, pickle, or curd.
