Easy and quick Rogan Josh Recipe

Rogan Josh is a traditional Kashmiri dish known for its rich, aromatic flavour and vibrant red colour. This lamb curry is cooked on low flame with spices and yogurt. This makes it very delicious. Let's see how it is made:



Ingredients:

  • 500 g lamb or goat meat, cut into medium pieces

  • 2 medium onions, finely sliced

  • 2 medium tomatoes, pureed

  • 1/2 cup yogurt, whisked

  • 2 tbsp mustard oil 

  • 1 tsp ginger-garlic paste

  • 1/2 tsp turmeric powder

  • 1 tsp Kashmiri red chili powder (for color, adjust for spice)

  • 1/2 tsp ground cumin

  • 1/2 tsp ground coriander

  • 1/2 tsp fennel powder

  • 1/2 tsp garam masala

  • 2-3 green cardamom pods

  • 1-2 cloves

  • 1-inch cinnamon stick

  • 1-2 bay leaves

  • Salt to taste

  • Fresh cilantro for garnish

Method of Making Rogan Josh

  • Heat mustard oil in a heavy-bottom pan until it starts to smoke slightly. Then reduce the flame, add all the spices, including bay leaf, cardamom, cloves, and cinnamon, and fry them for 30 seconds.

  • After this add chopped onions and fry till it becomes golden brown.

  • Now add ginger-garlic paste and cook for 1 minute.

  • After this add lamb pieces and fry them for 5-7 minutes. Fry them till they turn brown on all sides.

  • Now add turmeric, Kashmiri red chili powder, cumin, coriander, and fennel powder, mix well, and cook for 2-3 minutes. Then add tomato puree. Cook the spices until the oil starts to separate.

  • Now reduce the flame and add the whisked curd slowly. Keep stirring continuously to prevent the curd from curdling, and cook for 5 minutes.

  • After this, add 1-2 cups of water as per your requirement, mix well cover, and cook on low flame for 45-60 minutes. Keep stirring it in between, till the lamb becomes soft and all the flavors are well mixed.

  • Now add garam masala and salt as per taste and cook for additional 5 minutes.

  • Serve it in a serving bowl and garnish with fresh coriander leaves.

  • Serve it hot with steamed rice, naan, or roti. It is very tasty to eat.
