Healthy and tasty Mixed Bean Soup Recipe

Beans are small, nutrient-rich seeds. There are many types of beans under this, including black beans, kidney beans and chickpeas. These beans contain plant-based protein, fiber, vitamins and minerals. They contain all these nutrients in excellent quantities. Beans help in digestion, heart health and stabilizing blood sugar levels. A variety of things can be made from beans, ranging from soups, salads, stews and dips. Beans are a good source of protein for vegetarians. Soup can also be made from beans which is very beneficial for health. It is very easy to make, let's see how to make it:



Ingredients:

  • 1 cup mixed dried beans 

  • 1 small onion, chopped

  • 2-3 garlic cloves, minced

  • 1 medium carrot, diced

  • 1 celery stalk, diced

  • 2 small tomatoes diced 

  • 4 cups vegetable broth or water

  • 1 tbsp olive oil

  • 1/2 tsp dried thyme

  • 1/2 tsp ground cumin

  • Salt and black pepper to taste

  • Fresh parsley for garnish

Method of making Mixed Bean Soup:

  • Soak the dried beans in water overnight. The next day, wash them with clean water and keep them aside.

  • In a large pot, heat olive oil over medium heat.

  • Add chopped onions and garlic and saute for 3-4 minutes.

  • Add chopped carrots and celery. Mix well and cook for 3-4 minutes until they start to soften.

  • Add mixed beans, chopped tomatoes, vegetable broth, thyme, cumin, salt and pepper. Mix well and bring the soup to a boil.

  • Cover the soup and let it cook for 30-40 minutes.

  • Ladle the soup into bowls, garnish with fresh parsley. Serve hot with crusty bread.
