Healthy and Tasty Pumpkin Soup Recipe

Pumpkin is a nutrient-rich vegetable. It is rich in vitamins A and C, antioxidants and fiber. Pumpkin is beneficial for our eye health, immune support and digestion. Soups, pies, desserts and savory dishes are made from it. It is very delicious in taste but also has low calorie content. It can be a great option for a balanced diet. Pumpkin soup is one such option that can be made easily. It is very easy to make and can be drunk at any time. Let's see how this nutrient-rich soup is made:


Ingredients:

  • 3 cups pumpkin, peeled and diced (or canned pumpkin purée)

  • 1 small onion, chopped

  • 2-3 garlic cloves, minced

  • 1 tbsp olive oil or butter

  • 3 cups vegetable or chicken broth

  • 1/2 cup coconut milk or cream (for creaminess)

  • 1/2 tsp ground cinnamon or nutmeg (optional, for warmth)

  • Salt and black pepper to taste

  • Fresh parsley or pumpkin seeds for garnish

Method of making Pumpkin Soup:

  • Place a large pan over medium heat and heat olive oil or butter in it.

  • Add chopped onion and garlic. Saute onion well and sauté for 3-4 minutes until soft and fragrant.

  • Add pumpkin pieces to the pan and sauté for 5-7 minutes so that the pumpkin is coated with the onion-garlic mixture.

  • Add vegetable or chicken broth and add salt, pepper and ground cinnamon or nutmeg to taste. Mix well and cover and let it boil for 15-20 minutes. Lower the heat and simmer until the pumpkin is soft.

  • Once the soup is cooked, remove it from the heat and puree the soup until smooth.

  • Put the soup back on the heat. Add coconut milk or cream to increase the creaminess of the soup.

  • Then heat the soup slowly for 2-3 minutes.

  • Pour the soup into bowls and serve hot with crusty bread.
