Healthy and tasty Tomato Basil Soup Recipe

Tomato Basil Soup is light, tangy and full of flavour of fresh tomatoes and basil. It is very easy to make and is perfect as a healthy starter or a light meal. This soup gives us many medicinal properties of tomatoes and basil. Let's see how to make this soup: 



Ingredients:

  • 6-7 medium ripe tomatoes, roughly chopped

  • 1 small onion, finely chopped

  • 3-4 garlic cloves, minced

  • 1 cup vegetable broth or water

  • 1/2 cup fresh basil leaves, chopped

  • 1 tbsp olive oil 

  • 1/2 tsp black pepper

  • Salt to taste

  • 1/2 tsp sugar (optional, to balance acidity)

  • 1/4 cup coconut milk or cream (for creaminess)

  • Fresh basil leaves for garnish

Method of making Tomato Basil Soup:

  • First, heat a large pot of olive oil over medium heat.

  • Add chopped onions and sauté until soft and translucent.

  • Add chopped garlic and cook for another minute until fragrant.

  • Add chopped tomatoes and half of the basil leaves and mix well.

  • Shrink the pan and cook for 8-10 minutes until the tomatoes are soft and easy to mash.

  • After 8-10 minutes, remove the pan lid and mix again. Add vegetable broth or water and mix. Add salt, pepper, and sugar (if using) to taste.

  • Once mixed, cover the pan and allow the soup to simmer on low for 15-20 minutes to combine all the flavors.

  • When the tomatoes are completely soft, remove the pot from the heat.

  • You can drink it as is but if you prefer you can blend it to make a smooth puree.

  • Add coconut milk or fresh cream to make it creamier.

  • Garnish the soup with fresh basil leaves and serve with warm bread, toast, or salad.



Tip:

Adding a few pieces of bread while simmering the soup thickens the texture.

For a deeper flavour, roast the tomatoes in the oven for 20 minutes before adding them to the soup.
