Healthy and Tasty Zucchini and Basil Soup

Ingredients:

  • 2 medium zucchinis, sliced

  • 1 small onion, chopped

  • 2-3 garlic cloves, minced

  • 1 cup fresh basil leaves

  • 3 cups vegetable broth or water

  • 1/2 cup coconut milk or cream (optional for creaminess)

  • 1 tbsp olive oil or butter

  • Salt and black pepper to taste

  • Fresh basil leaves for garnish

Method of making Zucchini and Basil Soup:

  • Heat the oil in a pan. Add the chopped onion and garlic. Saute for 2-3 minutes until aromatic and the raw smell is gone.

  • Add the chopped zucchini and saute for 5-7 minutes. Cook until it softens a little.

  • Add vegetable broth or water and simmer on low flame for 10-15 minutes until the zucchini softens.

  • Once cooked, remove the pan from the heat and let it cool a little.

  • Add fresh basil leaves.

  • Blend the soup well to make it smooth.

  • Put the soup back in the pan and add coconut milk or cream to it. This adds creaminess to the soup.

  • After this, heat the soup lightly and add salt and pepper to taste.

  • Once cooked, pour the soup into bowls and garnish with fresh basil leaves.

  • Serve the soup hot with crusty bread or a light salad.
