How to make Aloo Gobi in different way

Aloo Gobi is a classic Indian household dish made with potatoes (aloo) and cauliflower (gobi). It is spiced with a lot of aromatic spices. It can be made in many ways. Today, we will learn how to make it in a different way. It is a vegetarian, gluten-free, and delicious dish. Let's see how it is made:


Serving - 2 people Time 1 hour

Ingredients:

  • 2 medium potatoes, peeled and diced into small cubes

  • 1 medium cauliflower, cut into florets

  • 1 large onion, finely chopped

  • 1-inch piece of ginger 

  • 1 teaspoon garlic paste

  • 2 medium tomatoes, finely chopped

  • 2-3 green chilies, slit (optional, adjust to taste)

  • 2 tablespoons mustard oil

  • 1/2 teaspoon methi seeds

  • 1 teaspoon cumin seeds

  • 1 teaspoon turmeric powder

  • 1 teaspoon coriander powder

  • 1 teaspoon cumin powder

  • 1 teaspoon red chili powder (optional)

  • 1 teaspoon garam masala

  • Salt, to taste

  • Fresh cilantro leaves, chopped (for garnish)



Method of Making Aloo Gobi:

1. Prepare the potatoes and cauliflower:

  • Heat 1 tablespoon oil in a large pan on medium flame.

  • Add the chopped potatoes and fry them till they turn golden. When they are well fried, take them out and keep them aside.

  • After this, fry the cauliflower pieces in the same pan for 5-7 minutes. Until they turn light golden. After that take them out and keep them aside.

2. Cook the masala:

  • Heat oil in the same pan.

  • Add cumin seeds and fenugreek seeds and let them crackle.

  • Now add chopped onions and fry till golden brown.

  • After this add green chilies and ginger garlic paste and fry for another minute.

  • Add chopped tomatoes and cook till they become soft.

  • When tomatoes are cooked add all the dry spices (turmeric powder, coriander powder, garam masala, cumin powder, red chili powder (if using), and salt) and mix it well. If you want add two to three teaspoons of water so that the spices do not burn and cook the spices for 1-2 minutes.

  • When the spices are cooked add roasted potatoes and cauliflower and mix the vegetables well with the spices so that the vegetables are well coated with the spices.

  • After mixing well cover it and cook on low flame for 10-15 minutes. Keep stirring it in between so that it does not burn. You can add a little water if needed. Garnish with freshly chopped coriander leaves.

  • You can eat it with dal, rice, roti, and paratha. You can also eat salad with it.
