How to make Bitter Gourd tasty

Bitter Gourd, commonly known as Karela in India, is a vegetable filled with many nutrients but very bitter in taste. Due to its bitter taste, people don't like to eat it. But today, we will learn how to make this vegetable less bitter so that everyone can benefit from it. This recipe balances the bitterness with spices, making it a delicious addition to any meal.



Ingredients:

  • 4 medium-sized karela (bitter gourds)

  • 1 large onion, finely sliced

  • 6-7 garlic cloves

  • 1 tsp cumin seeds

  • 1 tsp fennel seeds 

  • 1 tsp Kalonji Seeds

  • 1 tsp Fenugreek Seeds

  • 1/2 tsp turmeric powder

  • 1/2 tsp amchur (dry mango powder) or juice of half a lemon

  • Salt to taste

  • 2 tbsp oil

  • Fresh coriander leaves, chopped (for garnish) (optional)


How to make Bitter Gourd tasty

Method of making bitter gourd vegetables:

  • Wash the bitter gourds thoroughly and cut them into thin round pieces. Remove the seeds if desired.

  • Sprinkle some salt over the chopped bitter gourds and keep them aside for 30 minutes. This step reduces the bitterness of bitter gourd.

  • After 30 minutes, squeeze out the excess water from the bitter gourd pieces and wash them thoroughly to remove salt.

  • In a pan, roast cumin seeds, fennel seeds, Fenugreek Seeds, and kalonji well. After roasting, let it cool slightly and grind it finely.

  • Mix the spices well in the bitter gourd and keep it aside.

  • Now heat the oil in a pan. Add onion and fry well.

  • Now add the mixture of bitter gourd and spices and mix well. Add turmeric powder and salt and mix well.

  • Cover the pan and cook on low flame for about 15-20 minutes, stirring occasionally, until the bitter gourd becomes soft and slightly crispy.

  • Once the bitter gourd is cooked, you can add dry mango powder or lemon juice on top.

  • You can eat it hot with chapati, roti, or rice and dal.



Health Tips and tricks:


  • Sprinkling salt on the bitter gourd and squeezing it helps reduce the bitterness. You can also boil the bitter gourd pieces in hot water for a minute before cooking.

  • You can add potatoes or tomatoes to the vegetable to enhance the taste and reduce the bitterness further.

  • Bitter gourd is very beneficial for diabetic patients.
