How to make Broccoli and Almond Soup

Both broccoli and almonds are rich in nutrients. By including them in our diet, we get many types of nutrients which are very beneficial for our health. Many types of dishes can be made from broccoli and almonds, one of them is their soup which is very easy to make. This soup is creamy and delicious. Let's see how it is made:



Ingredients:

  • 2 cups broccoli florets (about 1 medium head of broccoli)

  • 1 small onion, chopped

  • 2-3 garlic cloves, minced

  • 1/4 cup almonds (soaked in warm water for 20 minutes, peeled)

  • 1 cup milk (dairy or plant-based) or 1/2 cup coconut milk for creaminess

  • 2 cups vegetable broth or water

  • 1 tbsp olive oil or butter

  • Salt to taste

  • 1/2 tsp black pepper

  • 1/4 tsp nutmeg (optional)

  • Almond slivers and fresh parsley for garnish



How to make Broccoli and Almond Soup


Method of making Broccoli and Almond Soup:

  • First, we will prepare the almonds by peeling them. For this, we must soak the almonds in hot water for about 20 minutes.

  • In a large pot, heat olive oil or butter on medium heat.

  • Add chopped onion, and garlic, and sauté for 2-3 minutes until they become soft and aromatic.

  • Add broccoli florets and peeled almonds to the pan and mix it well with the onion and garlic.

  • Add vegetable broth or water to it and mix. Add salt and pepper to it. Add a pinch of nutmeg if desired.

  • Cover the pan and let it simmer for about 10-15 minutes until the broccoli becomes soft.

  • Once the broccoli becomes soft, remove the pot from the heat and blend the soup until smooth.

  • Pour the soup back into the pot and heat it. Add milk or coconut milk to it and mix. You can add more salt and pepper to the soup as per your taste.

  • Pour the prepared soup into a bowl garnish it with almond pieces and serve with slices of bread.
