How to make Carrot Ginger Soup

Carrot ginger soup is a smooth and tasty soup which is very beneficial for our health. Carrots are rich in vitamin A. By making its soup, we get many nutrients from carrots and ginger. We can eat it during lunch and dinner. This soup helps us to feel energetic during whole and also loaded with vitamins and antioxidants. Lets take a look how to make this soup:



Ingredients:

  • 5-6 medium carrots, peeled and chopped

  • 1 medium onion, chopped

  • 2-3 garlic cloves, minced

  • 1-inch piece of fresh ginger, peeled and minced

  • 3 cups vegetable broth or water

  • 1 tbsp olive oil or butter

  • 1/2 tsp ground cumin 

  • 1/2 tsp ground black pepper

  • Salt to taste

  • Juice of 1/2 lemon or orange (for a citrusy twist)

  • Fresh coriander for garnish

  • 1/4 cup coconut milk or cream (optional for a creamier texture)



How to make Carrot Ginger Soup


Method of making Carrot Ginger Soup:

  • Place a pan on medium heat and add olive oil or butter and heat it.

  • Once the oil is hot, add chopped onions and garlic. Saute the onions for 2-3 minutes until they are soft and translucent.

  • After this, add chopped ginger and cook until fragrant.

  • Now add chopped carrots and mix well with the ginger-garlic mixture.

  • Add cumin seeds and a pinch of salt and mix well.

  • After this, add vegetable broth or water to it so that it covers the carrots. Mix it well and cover and cook on low flame for about 20 minutes or until the carrots are soft.

  • After 20 minutes, when the carrots are soft, remove the pot from the heat and blend the soup to make a smooth puree.

  • You can use an immersion blender or blender to blend.

  • After blending, pour the soup back into the pot and add crushed black pepper and salt and boil once. If you like a little sour taste in your soup, you can add lemon or orange juice to it.

  • Turn off the heat after a boil and you can add coconut milk or cream to it for a creamier taste.

  • Pour the soup into bowls, garnish with fresh coriander or parsley and serve hot.


Tips and tricks:


  • The orange juice gives a sweet and tangy taste that pairs well with ginger and carrots.

  • You can add a pinch of red chilli flakes or cayenne pepper to the soup for a little spiciness.

  • You can also add some boiled potatoes or sweet potatoes to the soup to add more creaminess.

  • You can also add beetroot or other vegetables to make the soup even healthier.
