How to make Lentil and Vegetable Soup

Lentil and vegetables are rich in protein, fiber, and vitamins. The soup made from them gives us all kinds of nutrients like protein, fiber, and vitamins. It is very beneficial for our health. Drinking this nutritious soup during illness is very beneficial for our health. It is very easy to make and you can add vegetables of your choice to it. Let's see how to make it:



Ingredients:

  • 1 cup red or green lentils (washed and soaked for 20 minutes)

  • 1 small onion, finely chopped

  • 1 carrot, diced

  • 1 zucchini, diced (or any other vegetable of your choice)

  • 1 small potato, diced

  • 1/2 cup spinach or kale, roughly chopped

  • 1 tomato, chopped

  • 2-3 garlic cloves, minced

  • 1 tsp cumin seeds

  • 1/2 tsp turmeric powder

  • 1 tsp ground cumin 

  • 1/2 tsp ground black pepper

  • 1/2 tsp paprika or red chili powder (optional)

  • 1 tbsp olive oil or any cooking oil

  • 4 cups vegetable broth or water

  • Salt to taste

  • Juice of 1/2 lemon

  • Fresh cilantro or parsley, chopped (for garnish)



How to make Lentil and Vegetable Soup


Method of making Lentil and Vegetable Soup:

  • First, we will wash the lentils thoroughly and soak them in water for 20 minutes to soften them. Then drain the water and keep it aside.

  • Now take a pan and heat some olive oil on medium flame.

  • Add cumin seeds and let them crackle for a few seconds.

  • Now add chopped onions and garlic. Saute till the onions become soft (about 2-3 minutes).

  • After this, add chopped carrots, zucchini, potatoes, chopped spinach or kale, and tomatoes and mix well.

  • After sauteing the vegetables, add turmeric powder, ground cumin, paprika (if using), black pepper and salt to taste. Mix the vegetables well with the spices.

  • Add soaked lentils mix well with the vegetables and add vegetable broth (or water).

  • Cover it and let the soup boil. After it boils, mix the soup cover it, and cook it on low flame for 20-25 minutes. Check after 25 minutes, if the lentils or vegetables are not cooked then cook them for a little longer.

  • Turn off the flame and garnish it with fresh coriander. Serve it hot with slices of bread or salad. You can also add lemon juice to it before eating.


  • You can use any vegetable to make this soup. You can make it completely healthy.

  • You can add coconut milk or fresh cream to it for a creamy flavor.

  • This nutritious soup is a great option for a nutritious lunch or dinner, providing an excellent source of protein and fiber.
