Mixed Vegetable Sabzi Recipe: Indian healthy dish

Mixed Vegetable Sabzi is a nutritious Indian dish made by mixing various vegetables and aromatic Indian spices. It is eaten with chapati, roti, or rice. It contains many vegetables and is rich in many nutrients that are good for our health. Let's see how it is made.



Ingredients to make:

Vegetables:

  • 1 cup cauliflower florets

  • 1 cup diced carrots

  • 1 cup diced potatoes

  • 1 cup green beans, cut into 1-inch pieces

  • 1 cup green peas (fresh or frozen)

  • 1 cup diced bell pepper (any color)

  • 1 medium onion, finely chopped

  • 1 medium tomato, finely chopped

  • 1-2 green chilies, finely chopped 



Spices:

  • 2 tbsp oil

  • 1 tsp cumin seeds

  • 1 tsp mustard seeds

  • 1/2 tsp turmeric powder

  • 1 tsp red chili powder (adjust to taste)

  • 1 tsp coriander powder

  • 1/2 tsp garam masala

  • 1 tsp ginger-garlic paste

  • Salt, to taste

  • 2-3 tbsp fresh coriander leaves, chopped for garnishing



Preparing the vegetables for cooking

  • Wash all the vegetables thoroughly and cut them into small pieces.

  • If you are using fresh peas, you can use them directly. But if you are using frozen peas, then keep them in hot water and bring them to normal temperature.

Method of cooking:

  • Heat oil in a large pan.

  • When the oil is hot, add mustard seeds and let them crackle. Then add cumin seeds and fry for a few seconds until the aroma comes.

  • When the cumin seeds are well roasted, add finely chopped onions and fry till they become golden brown.

  • Now add ginger-garlic paste and green chilies and fry till they are well cooked. then add capsicum and fry till crispy.

  • Add chopped tomatoes and cover and cook till they become soft. Cook it till the oil separates from the spices.

  • Now add turmeric powder, red chili powder, coriander powder, garam masala, and salt and mix well.

  • When the spices are fried well, add chopped potatoes and carrots first and fry well for a few minutes.

  • After this add cauliflower, green beans, and peas. Mix it well and fry for 2-3 minutes.

  • Now add water to it and cover the pan and let the vegetables cook on medium flame. Keep stirring it in between. So that the vegetables do not burn.

  • When the vegetable is cooked, garnish it with fresh coriander leaves.

  • You can serve it hot with hot chapati, roti, naan, or rice. You can also eat it with plain curd or pickle to increase its taste.


Mixed vegetables contain many types of vegetables and spices which are beneficial for our health. But consuming them in high amounts at one time can harm our stomach and health. We get many types of vitamins and proteins from vegetables. You can add more vegetables of your choice to it and make it even healthier.
