North Indian Style Kadhai Chicken Recipe

Kadhai Chicken is a famous and delicious dish of North India which is made in a pan. Many types of spices are used in it which makes it very tasty. It is mainly cooked with aromatic spices, onions, tomatoes, and capsicum. Its gravy is very thick and dry and is served with naan, roti, or rice. It is easy to make, we can easily make it at home by keeping some things in mind. Let's see how it is made:


Ingredients:

For the Chicken:

  • 1 kg chicken (bone-in or boneless, cut into pieces)

  • 3 tbsp oil 

  • 2 medium onions (sliced)

  • 3 medium tomatoes (pureed)

  • 1 capsicum (cut into cubes)

  • 2 green chilies (slit)

  • 1 tbsp ginger-garlic paste

  • 1/2 cup yogurt (whisked)

  • 1/2 cup water (adjust as needed)

  • Salt to taste

  • Fresh coriander leaves (for garnish)

For the Spice Blend (Kadhai Masala):

  • 2 tsp coriander seeds

  • 1 tsp cumin seeds

  • 2 dried red chilies

  • 1 tsp black pepper

  • 1 tsp fennel seeds

  • 1/2 tsp garam masala

  • 1/2 tsp turmeric powder

  • 1 tsp red chili powder

  • 1 tsp kasuri methi (dried fenugreek leaves)

Method of making Kadhai Chicken:

  • To prepare the kadhai masala, dry roast coriander, cumin, dried red chilies, black pepper, and fennel for a minute till the aroma starts coming out.

  • After this, grind them coarsely and keep them aside.

  • Now heat the oil in a pan. Add chopped onions and fry till golden brown.

  • After this, add ginger-garlic paste and cook till the raw smell disappears.

  • Now add pureed tomatoes, salt, turmeric, red chili powder, and prepared kadhai masala and mix well. Cook it till the oil starts separating from it, it may take 5-7 minutes.

  • Now add whipped curd and mix well. Let it cook for a few minutes.

  • Add chicken pieces and mix it so that it gets well coated with spices. After this, cover it and let it cook for a few minutes. Make sure it does not burn.

  • Add 1/2 cup water, cover, and cook for 20 minutes until the chicken is tender.

  • Add capsicum, green chilies, garam masala, and kasuri methi and mix well. Cook for another 5 minutes until the capsicum is tender but still crunchy.

  • Once the chicken is cooked, garnish it with fresh coriander leaves and serve hot with naan, roti, or jeera rice.
