One Pot Beetroot Soup Recipe

Beetroot is a nutrient-rich root vegetable. It has many health benefits. Beetroot is rich in vitamins and minerals like folate, iron, potassium, and vitamin C. It is very beneficial for our heart health. It is rich in antioxidants like betalain which helps in reducing inflammation. We can use it in many dishes like salad, juice, and soup. Soup made from beetroot is very beneficial for our health. Let's see how to make this:



Ingredients:

  • 3 medium beets, peeled and chopped

  • 1 medium potato, peeled and diced (for creaminess)

  • 1 small onion, chopped

  • 2 garlic cloves, minced

  • 3 cups vegetable broth or water

  • 1 tbsp olive oil or butter

  • 1/2 cup coconut milk, cream, or yogurt

  • Salt and black pepper to taste

  • Fresh dill, parsley, or a swirl of cream for garnish


One Pot Beetroot Soup Recipe

Method of making Beetroot Soup:

  • Heat oil or butter in a large pot. Add chopped onion and garlic and fry well for 2-3 minutes.

  • After this add chopped beetroot and potatoes. Stir it and cook for 5 minutes.

  • Now add water and mix well. Reduce the flame cover the pot and boil it for 20-25 minutes.

  • When the soup is cooked, make a good puree with the help of a hand blender.

  • After this add salt and black pepper to the soup as per taste and mix well.

  • You can also add milk or cream to make the soup creamier. After this boil the soup one last time and remove it from the gas.

  • Serve the prepared soup in a bowl and garnish it with cream and fresh coriander. You can serve it hot with bread or salad.

  • This soup is very beneficial for our health. We get many types of nutrients from it.
