One pot Cabbage and Carrot Soup Recipe

Cabbage and carrot soup is easy to make. They are versatile and nutrient-rich vegetables that complement each other in taste and health benefits. Cabbage is rich in vitamins C, and K, and antioxidants, supporting our body's immunity, digestion, and bone health. Carrots are rich in beta-carotene, converted into vitamin A, promoting eye health. Both vegetables are low in calories and high in fiber, making them a balanced diet. They have a natural sweetness and crunchiness, making them perfect for salads, stir-fries, soups, etc. The soup made from them is very beneficial for our health. Let's see how it is made:



Ingredients:

  • 2 cups cabbage, finely shredded

  • 1 cup carrot, diced or grated

  • 1 small onion, chopped

  • 2 garlic cloves, minced

  • 1 medium tomato, chopped (for added flavor)

  • 3 cups vegetable broth or water

  • 1 tbsp olive oil or butter

  • 1/2 tsp black pepper

  • 1/2 tsp cumin seeds

  • Salt to taste

  • Fresh parsley or cilantro for garnish

  • Lemon wedges for serving (optional)

Method of making Cabbage and Carrot Soup:

  • First, heat a pan over medium heat and add olive oil or butter to it.

  • Now add cumin seeds and let them crackle.

  • After this, add chopped onion and garlic and fry for 2-3 minutes until soft.

  • Now add cabbage, carrot, and tomato to it. Mix all the vegetables well and cook for 5 minutes until soft.

  • When the vegetables are well roasted, add vegetable broth or water to it and mix it. Cover the pan reduce the flame and cook for 10-15 minutes until the vegetables become soft.

  • When the vegetables become soft, add black pepper and salt to them according to taste. Taste the soup once and adjust the seasoning as needed.

  • After this, boil the soup once again.

  • Serve the soup in bowls and garnish with fresh coriander.
