One Pot Spinach and Lentil Soup Recipe

Spinach and lentils are seen as a powerhouse combination. They are rich in many essential nutrients. Spinach is rich in vitamins A, C, and K, iron, and antioxidants, while lentils are also a plant-based protein. Lentils contain protein, dietary fiber, and complex carbohydrates. Both of these are very beneficial for our health and benefit us in many ways. Many types of dishes are made from spinach. Lentils are also used to make many types of dishes. By using both of them together, we can make many types of dishes that are rich in nutrients, satisfying, and nutritious. Today we will learn how to make a soup of Spinach and lentils. So let's see how it is made:



Ingredients:

  • 1 cup rinsed lentils (red, green, or brown) 

  • 2 cups fresh spinach, roughly chopped

  • 1 small onion, chopped

  • 2 garlic cloves, minced

  • 1 medium carrot, diced

  • 2 medium tomatoes, chopped 

  • 4 cups vegetable broth or water

  • 1 tbsp oil or butter

  • 1/2 tsp cumin powder 

  • 1/2 tsp turmeric powder

  • Salt and black pepper to taste

  • Fresh parsley or cilantro for garnish



One Pot Spinach and Lentil Soup Recipe


Instructions for making Spinach and Lentil Soup:

  • First, wash the lentils thoroughly and keep them aside.

  • Now clean and wash the spinach thoroughly and chop it. After chopping, keep it aside.

  • Now heat oil in a pan add chopped onion and garlic and fry it well.

  • When it is fried well, add chopped carrots and tomatoes, and mix it well.

  • Cook them until the tomatoes become soft and their juice starts coming out. It may take 4-5 minutes.

  • Add washed lentils, spinach, cumin powder, turmeric powder, and salt as per taste and mix well. After this, add vegetable broth or water to it and let it boil.

  • Cover the soup and let it boil on low flame for 20-25 minutes. Or cook it till the soup is cooked.

  • When the soup is cooked, take it off the gas. Add black pepper to it and mix well.

  • Pour the soup into a bowl garnish with fresh coriander leaves and serve.
