Simple yet delicious Khichuri (In Bengali Style)

Khichuri is a traditional dish made in Bengal. It is very easy to make. Rice and many types of vegetables are added to it, which makes it very nutritious and rich in many nutrients, along with being tasty. Let's see how it is made:



Ingredients:

  • 1 cup basmati rice washed

  • 1 cauliflower, cut into big pieces

  • 2 potatoes, peeled and cut into four pieces

  • 1 cup of peas

  • 1 cup moong dal

  • Mustard oil

  • 20 gms ginger

  • 10 garlic cloves

  • 6 cardamom seeds

  • 2 cinnamon sticks

  • 4 cloves

  • 4 bay leaves

  • 2 tsp cumin seeds

  • 1 large onion finely chopped

  • ½ tsp turmeric powder

  • 2 tbsp coriander powder

  • 1 tbsp red chilli powder

  • 2 tsp sugar

  • 4 tsp salt

  • 2 tbsp ghee

  • Water as required

Method of making Khichuri 

  • Grind ginger and garlic and make a paste.

  • After this, add little water to cardamom, cinnamon, and cloves and grind them to make a paste.

  • Now put the lentils in a pan and fry them on medium flame while stirring continuously till it become, golden brown. Cool the lentils and wash them.

  • Now, heat oil in a pan. Add bay leaves and cumin seeds and stir for a few moments. After this, add the onion and fry till it becomes golden brown.

  • Add ginger-garlic paste and stir for a few moments. Then add washed lentils, rice and remaining ingredients like water and spice paste and mix well.

  • After this, cover it and let it cook. After cooking, add spice paste and ghee and serve hot.
