Tasty Uttapam: Indian healthy breakfast

Uttapam is a popular South Indian dish that people like to eat for breakfast. It is like a pancake topped with many vegetables like onion, tomato, carrot, and chili. Uttapam is usually made from a mixture of fermented rice and urad dal. This breakfast is very nutritious to start the day and can be served with many vegetables. Let's know how it is made:



Tasty Uttapam: Indian healthy breakfast

Ingredients:


For the Batter:

  • 1 cup idli rice

  • 1/2 cup urad dal (split black gram)

  • 1/4 tsp fenugreek seeds (methi seeds)

  • Water, for soaking and grinding

  • Salt, to taste


For Topping:

  • 1 small onion, finely chopped

  • 1 small tomato, finely chopped

  • 1 small carrot, grated

  • 1 small capsicum (bell pepper) (optional)

  • 2 green chilies, finely chopped 

  • 2-3 tbsp fresh coriander leaves, chopped

  • Salt, to taste

  • Oil for cooking



Instructions to make Uttapam:

Prepare the batter:

Soak the Rice and Dal:

  • Wash rice and urad dal thoroughly with water till water runs clear. Wash both separately.

  • Soak rice with fenugreek seeds in water overnight.

  • Similarly, soak urad dal in water overnight.



Grind the batter:

  • Strain the soaked rice and urad dal.

  • Grind the rice along with fenugreek seeds in a mixer. If the batter looks a little thick, you can add water.

  • After grinding the rice, take it out in a large bowl.

  • Similarly, grind the urad dal finely by adding water gradually. Your batter is ready when the urad dal batter starts floating on the water.

  • Put both the batters in a large bowl and add salt and mix well. Its consistency should be like pancake batter.

  • Now cover the bowl and keep the batter in a warm place for 8-12 hours or overnight. This will ferment the batter.



Prepare the Topping: 

To prepare the topping, add chopped onions, tomatoes, carrots, green chilies, coriander leaves, and some salt in a mixing bowl.

Method of making Uttapam:

  • Heat a pan on medium flame. Apply some oil on it.

  • Pour a ladle of batter into the pan and spread it thinly (about 1/4 inch thick).

  • Sprinkle a handful of vegetable toppings evenly on this batter and press it gently with a spatula.

  • Drub some oil on the sides and top of the uttapam.

  • Cook it on medium flame till the bottom side turns golden brown (about 2-3 minutes).

  • Flip the uttapam and cook it till the other side turns golden brown (about 2 minutes).

  • Take the cooked uttapam off the pan and prepare the remaining uttapams with the remaining batter and toppings.

  • Serve hot Uttapam with coconut chutney, and tomato chutney.
