Thai Coconut Soup (Tom Kha) Recipe

This Thai coconut soup is a creamy, delicious dish that combines the goodness of coconut milk with lemongrass and some spices. It is a comforting dish. Let's see how to make it.


Ingredients:

  • 2 cups coconut milk

  • 2 cups vegetable or chicken broth

  • 1 cup mushrooms (button or shiitake), sliced

  • 1 stalk lemongrass, bruised and cut into 2-inch pieces

  • 2-3 kaffir lime leaves (or zest of 1 lime)

  • 1-inch piece of ginger or galangal, sliced

  • 2 garlic cloves, minced

  • 1 tbsp red Thai curry paste

  • 1-2 tbsp fish sauce (or soy sauce for vegan)

  • 1 tbsp lime juice

  • 1 tsp sugar

  • 1 red chili, sliced (optional, for spice)

  • Fresh cilantro for garnish

Method of making Thai Coconut Soup:

  • To prepare the broth heat the coconut milk and broth (vegetable or chicken) over medium heat in a large pot.

  • Add lemongrass, kaffir lime leaves, ginger and garlic. Mix well and simmer for a few minutes.

  • Now add chopped mushrooms and cook until soft.

  • After this, add all the sauces red Thai curry paste, fish sauce (or soy sauce), lime juice, and sugar.

  • Adjust the seasonings to your taste and bring to a boil.

  • Remove the lemongrass and lime leaves before serving.

  • Serve the soup in bowls and garnish with fresh coriander leaves. You can enjoy it as a starter or as a light meal with rice.
